Well, it’s back to school time for us. A new season of busyness starts this week in the Walter household. Our kids are growing up: Stephen enters the 11th grade, and Charlie starts 5th grade. We look forward to a new year of learning, not only academically, but also physically (soccer practice!) and socially. Pike County High School’s STEM program requires students to take Agriculture classes, and I think Stephen’s schedule includes Floriculture. He enjoyed last year’s Horticulture curriculum, especially the lessons about bees. I am interested to see what kind of project Stephen will develop this year.

Dear CSA-ers,

This week’s preassembled bag will contain radishes, spring mix, cherry tomatoes, garlic, peppers, eggplant oregano and chives. Custom orders may be placed on the website between now and Tuesday at http://magneyfarm.locallygrown.net/market
We have put a date on our first Farm to Table dinner at the farm. We are still in the process of putting in our commercial kitchen but are forging ahead with our plans of a fabulous Fall dinner on November 1st at 5pm in the greenhouse of the farm. We would like to extend an invitation to our members to come and join us. Tickets will be $25 per person and our yearly members (if you paid for the entire year $700) will get 2 tickets for free. This is a member only perk until August 20th, and then we will open it up to our Farmers Market folks. We want to make sure you get your tickets first as a thank you for your continued support.
Patience is a virtue in farming and good things always take longer than you imagine. Water lines look so simple on paper but become a lot more complicated 3 feet deep in mud. After another evening without water to the house due to damaging the old line, the time is finally drawing near to take the new line live. The good news is, during the down time Sunday, we were blessed with a timely rain that took care of our outdoor watering. Sometimes, we do catch a break.
Fall crops are going in the ground as seeds and tiny seedling transplants. Some crops, like beets and carrots we put into the ground directly as seeds. Other crops need more of a head-start and are sewn by Caroline in the greenhouse weeks before they go outside. These tiny plants grow to size in seedling trays. Once they have 4 to 6 leaves, they’re ready to be transplanted outside. Some plants we have started with this method include varieties of kale, broccoli, cauliflower, and collards.
This week’s featured vegetable is radishes. Classically radishes are enjoyed raw on salads for their crisp peppery bite. We encourage you to delve deeper with radishes, including Caroline’s favorite radish preparation; painted with olive oil and oven roasted. In addition to containing vitamins and minerals, there is a growing body of research suggesting that radishes have potent antifungal activity. The plant uses this to protect itself from fungal pathogens in the soil, but it is thought that these compounds may be active against the irksome Candida fungal (yeast and thrush) infections humans are sometimes prone to. More research is needed to prove this link, but you can be sure that radishes make an excellent addition to a healthy, preventative, and holistic diet. We hope that you will enjoy them as much as we have.
Radish and Parsley Salad with Lemon
Ingredients
• About 10 medium or 12 small red radishes, scrubbed
• 3 large ribs celery, ends trimmed, peeled
• 1 cup tightly packed fresh flat-leaf parsley leaves
• 1 Tbs. fresh lemon juice; more to taste
• 1/4 tsp. kosher salt; more to taste
• 2 Tbs. extra-virgin olive oil
• Freshly ground black pepper
Preparation
• Trim the root and stem end of the radishes. Halve them lengthwise and then slice them 1/8 inch thick; you should have about 1-1/2 cups. Slice the celery crosswise 1/8 inch thick. Combine the sliced radishes, sliced celery, and parsley leaves in a medium bowl. Add the lemon juice, salt, and olive oil; toss well. Add several generous grinds of black pepper, taste and adjust seasonings, and serve

News From Our Growers:

RnR Farms: Back on the market with several of their delicious lettuces, Butterhead, Green Leaf, Red Leaf, Romaine Trio and Blends.

Carole’s Herbs (CS3 Farms): We have a new herbal, uncaffeinated, tasty tea available. Our staghorn fig tea tastes like a light green tea with a lemon twist – perfect hot or ice cold for the mid-summer heat. It’s made with dried fig leaves and staghorn sumac berries. We have a new batch of Scarborough Fair mustard ready for you to use on sandwiches, salads, and anything you want to make absolutely delicious. We also have some more cardamom honey made, in both 4 and 8 oz jars.

The Sugared Spoon: Just wanted to put a plug in for my new items. I have a Chocolate butterscotch-toffee cookie, buckeye brownies and a stuffed PB cookie. I also plan on setting up out there Wednesday with some samples and items to buy!

Caney Fork Farm: Check out our Andouille Sausage, the creole flavors go great with a dirty rice mix from the Creole Diva!

Rainbow Hill Farm: First Apples of the Season have arrived! Gingergold – sweet with some tartness, crisp and juicy. Peaches are almost finished for the season.

Oakview Farm: Early ‘Winter’ Squash and Pumpkin available this week and Whole Chickens available this week! Our Chickens have access to a new patch of grass everyday and we supplement their diet with squash and other veggies from our garden, along with layer crumbles. We do not use chemicals on our garden. The proceeds from everything we sell will go towards starting our summer camp for children with hearing loss, Oakview Farm Camp.

The Creole Diva: Great time to enjoy Camellia Red Beans and Rice, Creole Jambalaya or Dirty Rice mixes. You can also add sausage or brats from Caney Fork.

Mo’s Scrubs by Toya: Several helpful and useful things available for your face and body. Don’t forget the Bug-a-Boo Mosquito repellent, DEET FREE and safe for the whole family.

Short Mountain Cultures: Try our Bulk Foods, OPEN-POUR-EAT, easy classic granola. Pair it with Fresh Milk Kefir or Coconut Kefir and you’ll be set to go for hours! ABC Tempeh is soy free, gluten free, sugar free and vegan. Our original recipe can be used in many ways ie burgers, stir fry, breakfast patty and crumbled. Try it with you favorite sauce.

Flying S Farms: Red Lasoda Potato are available this week. Some have asked what is the Star of David Okra, it is a thicker walled okra that can be roasted or grilled and does not have as much ‘slim’ as other varieties do. It is wonderful fried, makes nice size medallion. Pair it with onions and tomatoes for a really Southern treat! Seriously HOT Strawberry Jam and our Peach Habanero Jam is back on the market, delicious with cream cheese, glaze over brats, Ben enjoys it with his eggs! It also goes well with Peanut Butter, really!

From our Meat Producers: Farrar Farms, Sow’s Ear Piggery, Caney Fork Farms, Crossing Creeks Farm all have some great selections of meats to make your meals great. From Beef, Pork, Lamb, Chicken grill, roast, broil, boil…delicious anyway you prepare them.

EGGSTRAORDINARY EGGS

Regardless of what the earth gives us by way of produce, we can pretty much count on our chickens to give us delicous and nutritious eggs year round. It’s a staple that we can count on for a versatile and reliable protein source for any meal.

One of the best things about eggs is that while they have their own taste, they blend well with so many things! We hope you’ll be inspired to try something different this week!

DIET OVERVIEW #1

Everybody has a diet whether they know it or not. Your diet is what you eat and planned or unplanned it affects both your current and future health, and should be done with thought and planning. This is part 3 in a series about health and weight loss eating plans to help you make YOUR right choices. The last two weeks weblogs contained general information about selecting a plan that works best for you. The remainder of this series will be examining the pros and cons of various popular diets.

US News & World Report has catagorized and ranked 41 of the most popular diets. It’s a fascinating study as their analysis puts hard numbers on the common-sense belief that no diet is ideal for everybody. The overall top two were included in our previous M@D websogs.

In their “Biggest Loser” weight loss category, they considered Weight Watchers to be the best. Weight Watchers is built around one simple philosophy – to help its members lose weight by making smarter and more healthful decisions about food while getting support from the Weight Watchers® community.

PROS

  • Unlimited food choices – you can eat anything you want as long as you track it
  • Promotes healthy and whole foods – the lowest point foods on Weight Watchersreg; are fruits, vegetables, and lean protein sources.
  • Teaches dieters about portion size and making better choices – the PointsPlusreg; system intuitively teaches dieters to make better decisions as they weigh whether or not a food choice is worth the points. Over time dieters tend to make better choices.
  • Support – many diets find support and accountability through weekly meetings and weigh ins.
  • Community – there is a huge community of people on Weight Watchers, which means that it is easy to find information, recipes, and other resources while you are on the diet.

CONS

  • The cost may be prohibitive for some people. There is a fee for weekly meetings and the online program. Currently a monthly pass to unlimited meetings is $39.95, which also includes the online program. Pay as you go meetings are $12 to $15 per week in addition to a one-time $20 registration fee. Online only is $16.95 monthly.
  • Lack of structure – if you are someone who needs structure, the diet itself won’t provide this since no one is telling you what to eat.
  • Keeping track of all the points can be tricky and time consuming.

MARKET CHITCHAT

Every once in a while we get a special treat and yesterday it was Boston Cream Puffs from Laura’s Confections. THANK YOU LAURA for treating our customers with the yummy samples.

This is a tough time of year for farmers. Most of the summer crops are petering out. Weeds are trying to take over, and the soil is still too hot for many cool weather seeds to germinate. That being said, KUDOS to our growers who are managing to keep things going during this transition between growing seasons.

For the time being we are going to suspend the New & Relisted Products section for a few weeks. Thank you for your understanding and please be sure to check the top of the Market page for new and featured items as they become available.

AVALON FARMS:

Due to obvious reasons (shown above) there will be no senposai greens available this week. Boy, you don’t look for 2 days and this happens. There are at least 4 different types of worms enjoying the greens! 

Thankfully the worms don’t enjoy the Swiss chard and perpetual spinach quite as much. Those will still be available this week.
